It all started after I found this recipe. But it didn’t stop there. I wanted to do more, make them more. So I kept going for it. And OH.EM.GEE!
I was told they were amazing. I was told I should sell them. And I personally, could not keep my paws out of the bag.
People, I think we found a winner! I think we found my new favorite cookie recipe. I will probably make a few tweaks to get it just right or even healthier, but this is a cookie that’s amazing as the recipe currently stands. A cookie that you don’t have to feel super guilty about eating (or guilty at all). And it’s a cookie that made for great post-workout fuel when I was feeling low blood sugar after a crazy strength session (maybe x4).
But seriously, if you are looking for a super easy, super delicious cookie recipe, look no further….
Vegan Banana Oatmeal Trail Mix Cookies
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
2 TBSP butter
1/2 cup sugar
1/2 cup brown sugar
1 flax egg*
1/4 cup ripe banana, mashed
1/2 tsp vanilla extract
2 cup quick oats**
1/4 cup chopped pecans
1/4 cup raisins
1/4 cup mini chocolate chips
Mix together flour, baking powder, baking soda, salt and cinnamon and set aside. Cream together the butter and sugars. Prepare your flax egg and add to the butter mixture, followed by the banana and vanilla. Stir in the flour mixture, oats and then add your mix-ins.
Prepare your baking sheets with parchment paper and drop by the tablespoonfuls. Bake at 350* for 10-12 minutes. Allow to cool on the baking sheet for a few minutes before moving to a wire rack.
*1 TSBP ground flax seed, 3 TBSP water (If you don’t care about making these vegan, you can just use 1 large egg)
**I didn’t have quick oats on hand so I used old fashioned and they still turned out delicious. But next time I make them I plan to get quick oats because I think they’ll turn out even better.
