Cooking Again

After weeks upon weeks upon weeks of feeling less than motivated in the kitchen, it’s been nice to start cooking a bit more this past week.  Have I still eaten a lot of my usual eats? Of course, english muffins and garbage bowl salads are some of my favorite things, but it’s important to change things up once and awhile.

So what are some of the different things I’ve been eating this week?

IMG_2256A breakfast of oatmeal and iced coffee – just as easy as my usual breakfast and just as fulfilling and delicious.

IMG_2271Another failed attempt at an omelette means enjoying a delicious egg scramble filled to the brim withe delicious veggies.

IMG_2273A fruity protein smoothie with a rice cake and celery topped with peanut butter.  This may not have a really taken much cooking per se, but it was just as delicious and filling!

I’m working on a new recipe for you (say what?!) and my first attempt was pretty close to perfect if I do say so myself. Veggie + tempeh stiry fry over quinoa – yum!

Sometimes it’s not about what we eat, but just working towards changing things up.

How will you change up your eats this week?

Thanks again to Jenn for hosting WIAW!

  1. I have been consciously trying to meal plan and eat three ‘real’ meals a day [instead of falling back into the 'throw everything in a bowl' routine that is so easy when you are a single lady...and lazy ;)] This is as much to take advantage of the amazing produce we have down here in Alabama as it is trying to eat more consistently throughout the day rather than overeating at night! LOVE the tempeh stir fry….reminds me I have some tempeh in the freezer I need to thaw out…

    I can’t make omelettes either. I just…can’t.

  2. eggie + tempeh stiry fry over quinoa = fantastic idea!!!!

  3. Aw I love the text additions to the pictures, they all look so much fun :) I love that you’re cooking again – I am getting back to cooking real meals too! Yay for us!

  4. LOVE tempeh, especially in a stir-fry!! Sounds delicious!

  5. I always feel more creative in the kitchen this time of year too than in the summer! Time to bust out the crock pot and make some soups and yummy comfort foods!

  6. Your pictures are so lovely, friend! I go through phases of not wanting to cook things as well, but I’m having fun making stuff at work now! :)

  7. Love the ants on a log! Whenever I make that for my son I steal a few bits. So good! I need to just make them for myself and enjoy them for a snack.

  8. Yay for you for getting back into it! I’m starting to as well. It’s hard to get over the slump.

  9. Love it! So glad you’re enjoying getting back in the kitchen! I went for a while in a bit of a rut, but over the last month or so, I’ve been on a ROLL! I’ve got so many recipes to share now, it’s crazy! Or really what’s crazy is the number of pictures I have to edit from all those recipes! Lol

Love that first pic! Is that the beautiful mess app? I keep meaning to look it up!
