It felt so good to have yesterday off but it was hard to be super productive because I was so tired from the 7 days in a row of working. Thank goodness for lots of coffee, water and maybe a bit of sugar thrown into the mix. 😉
Speaking of what I ate, it is Wednesday which means it’s time to share some of my yummy eats this week. And I do mean yummy eats.
Opening a couple days in a row called for some VERY early mornings. Thankfully there was coffee ready for me (poured into an extra cup from work) along with a pumpkin spice English Muffin, pumpkin spice peanut butter and a banana.
And while it looks like only 1/2 the English Muffin, that’s because I was so hungry and had already eaten the other 1/2. Oops. And just in case you were curious, you can be ravenous at 5am!
I’m a creature of habit, especially after years of stomach issues and when one finds foods that make you feel good, keep you full and taste delicious – you don’t mess with it. See?
Strawberry Chobani Greek yogurt with slice strawberries, 1/2 sliced apple and cereal. I ate the other 1/2 apple with some peanut butter.
My dad bought a new kind of soy based cheese for me this week and I asked him if he was thinking tacos. Well no matter what he was thinking of making, we turned it into tacos. I picked up some tempeh and pulled together a vegetarian taco filling. The rents had their usual taco filling but both agreed my tempeh filling was delicious. Success!
