I have to admit, that I’m on a major eggplant trip this year! Eggplant was always one of those vegetables that I liked, but never quite found a way to eat them that made me want or necessarily find them appetizing. I would always think of some overcooked eggplant parmesan from a diner in Jersey, which given my worsened food allergies is off the table anyway.
Well this year, my dad grew a couple different kinds of eggplants in his garden and when I have gone home to visit, eggplant has been included in the bag full of veggies that has been sent back with me to Grand Rapids, which means finding ways to use them and rediscover my love for eggplant.
I’m happy to say, that is exactly what it has done, and as such, today, I want to share a handful of recipes from my fellow bloggers featuring eggplant that may spark your love for eggplant too!
Eggplant Pizza from ME
I am still dreaming of these beauties! They were so delicious and honestly, super easy, which is a must when I come home from work exhausted and (admittedly) a bit lazy.

In a similar idea of replacing the crust of the pizza with eggplant, Laura replaces the bread with eggplant for this bruschetta! Sounds good to me!

Any recipe that includes roasting a head of garlic, is a winner in my book!

Yum–great round up! I’ve been loving eggplant the past few years too! I love to dice it up and add it to brown rice pasta or add it to a stir fry!
