It still amazes me after 26 years how my productivity depends on how busy I am.  When life is crazy busy, I’m super productive, but when life slows down a bit, I’m a lazy bum.  There’s really no other way to word it.  It’s like my motivation just goes flying out the window and if I’m not exactly sure of what needs to get done in a day and when, then almost nothing happens.  At least that’s how it feels.

 

Thankfully despite my laziness yesterday, I did find the motivation to make some blueberry banana bread.  I used my new banana bread recipe and one of my other favorites as inspiration to come up with this recipe.

3 mashed bananas

1 small blueberry Chobani Greek yogurt

1 egg white, beaten

1 tsp vanilla

1 tsp baking soda

pinch salt

1 cup whole wheat flour

1/2 cup almond meal

1 tsp cinnamon

1 cup fresh blueberries

 

Mix all dry ingredients, set aside.  Mix all wet ingredients and add dry ingredients to wet mixture, stir until well incorporated.  Fold in blueberries.

 

Spray a loaf pan with non-stick cooking spray and pour in batter.  Bake in a 350* oven for 50-60 minutes, until a toothpick inserted in the center comes out clean and you’ve got a nice golden brown color.

 

Let cool, slice and enjoy! 🙂

 

This would make a great snack as is or even with a slather of almond butter…mmMmmMmm.

    I’m definitely the same way with time management. Or if something doesn’t really NEED to be done…it’s super hard to motivate myself to do it. Like deep cleaning any area of the apartment haha I would be the same way with unpacking boxes, but I don’t want Dave to think I just sat on my laptop all day so it’s motivation to make it look like some improvement has been made. 🙂

    I wish my oven worked…I want to bake soooo bad!!! I think I would make this but with the strawberries I have in my fridge! 🙂

    I am the SAME way. I get SO much more accomplished when I’m super busy…it’s bizarre. I guess cause you kind of go on auto-pilot and literally have no choice but to move from one thing to the next whereas when you have time…you know you don’t need to push or something.

    This bread looks delicious! Love yogurt in baked goods – makes it so moist! 🙂

    This banana bread looks great! I love adding chobani into baked goods, they always turn out so moist. My favorite healthy snack this week has been lots of sweet roasted kabocha squash!
