It still amazes me after 26 years how my productivity depends on how busy I am. When life is crazy busy, I’m super productive, but when life slows down a bit, I’m a lazy bum. There’s really no other way to word it. It’s like my motivation just goes flying out the window and if I’m not exactly sure of what needs to get done in a day and when, then almost nothing happens. At least that’s how it feels.
Thankfully despite my laziness yesterday, I did find the motivation to make some blueberry banana bread. I used my new banana bread recipe and one of my other favorites as inspiration to come up with this recipe.
3 mashed bananas
1 small blueberry Chobani Greek yogurt
1 egg white, beaten
1 tsp vanilla
1 tsp baking soda
1 cup whole wheat flour
1/2 cup almond meal
1 tsp cinnamon
1 cup fresh blueberries
Mix all dry ingredients, set aside. Mix all wet ingredients and add dry ingredients to wet mixture, stir until well incorporated. Fold in blueberries.
Spray a loaf pan with non-stick cooking spray and pour in batter. Bake in a 350* oven for 50-60 minutes, until a toothpick inserted in the center comes out clean and you’ve got a nice golden brown color.
Let cool, slice and enjoy! 🙂
This would make a great snack as is or even with a slather of almond butter…mmMmmMmm.
Speaking of great snacks, a couple weeks ago my friends at Food Should Taste Good sent me this fun summer surprise to kick off their LetsSummer giveaway. Everyday through September 2nd they’re giving away 100 prizes, like grills, beach totes, coolers, and chips. How fun is that?
Thanks to Food Should Taste Good for the fun surprise. And a special thanks to Jenn for hosting this week’s What I Ate Wednesday!
