Cooking Again

After weeks upon weeks upon weeks of feeling less than motivated in the kitchen, it’s been nice to start cooking a bit more this past week.  Have I still eaten a lot of my usual eats? Of course, english muffins and garbage bowl salads are some of my favorite things, but it’s important to change things up once and awhile.

 

So what are some of the different things I’ve been eating this week?

IMG_2256A breakfast of oatmeal and iced coffee – just as easy as my usual breakfast and just as fulfilling and delicious.

IMG_2271Another failed attempt at an omelette means enjoying a delicious egg scramble filled to the brim withe delicious veggies.

IMG_2273A fruity protein smoothie with a rice cake and celery topped with peanut butter.  This may not have a really taken much cooking per se, but it was just as delicious and filling!

I’m working on a new recipe for you (say what?!) and my first attempt was pretty close to perfect if I do say so myself. Veggie + tempeh stiry fry over quinoa – yum!

 

Sometimes it’s not about what we eat, but just working towards changing things up.

    Love it! So glad you’re enjoying getting back in the kitchen! I went for a while in a bit of a rut, but over the last month or so, I’ve been on a ROLL! I’ve got so many recipes to share now, it’s crazy! Or really what’s crazy is the number of pictures I have to edit from all those recipes! Lol

    Love that first pic! Is that the beautiful mess app? I keep meaning to look it up!

      YES you should! My coworker and I are always coming in with our tuperwares full of ants on a log for a snack. 🙂

    I have been consciously trying to meal plan and eat three ‘real’ meals a day [instead of falling back into the ‘throw everything in a bowl’ routine that is so easy when you are a single lady…and lazy ;)] This is as much to take advantage of the amazing produce we have down here in Alabama as it is trying to eat more consistently throughout the day rather than overeating at night! LOVE the tempeh stir fry….reminds me I have some tempeh in the freezer I need to thaw out…

    I can’t make omelettes either. I just…can’t.

      I hope my inability to make omelets doesn’t hinder me from finding a man. If he wants scrambled or fried then I’m good, but omelets and he’ll send me packing… 😉
