I’m not sure about the rest of you guys, but the heat this summer has been killing me! I try to avoid putting on the AC but some days, there just isn’t an option. On those other days, I’m fighting the heat any way that I can. This has meant a lot of water, sitting in front of a fan, sleeping on the floor and eating ice cream. Don’t get me wrong, the latter, I am definitely not complaining about…especially when it’s homemade and super delicious!
Earlier this month, I shared the top things I look for when picking a protein powder after receiving a supply of Bob’s Red Mill’s new protein powders, and after enjoying numerous post workout smoothies, it was time I got a little creative.
I was feeling particularly inspired after seeing all of those dairy-free homemade ice creams so in order to celebrate Sunday’s National Ice Cream Day, I made myself some dairy-free chai protein ice cream! OH MY GOODNESS, you guys!!
This ice cream was delicious! I’m still surprised that I didn’t eat the whole container, but actually saved some to enjoy the next day. 😉
- 1 frozen banana
- 1 cup coconut cream
- ⅓ cup Bob’s Red Mill chai protein
- ⅓ cup cacao nibs
Blend frozen banana in a food processor and add coconut cream until smooth. Then add in protein until well mixed and pulse in cacao nibs. Pour mixture into a tupperware and put in freezer. Stir within the first 30 minutes and then let it set. Scoop, serve, enjoy!

OMG, this looks SO SO good! Thanks for sharing (have never thought to make homemade ice cream, but doesn’t look too hard!). I’d make mint chocolate chip, because it’s my favorite of all time ever 🙂
