I’m known to be a bit lazy when it comes to cooking dinner. I enjoy cooking and spending time in the kitchen but after a long day at the office, all I want to do is go home, throw on my sweats, and plop my butt on the couch to watch more Gilmore Girls or some other Netflix or Amazon Prime streaming show.
With that said, some nights it’s really nice to cook yourself a delicious, healthy meal that isn’t quite as basic as throwing some eggs in a pan or reheating last night’s leftovers. Today I’ve gathered 3 delicious sounding meals from some of my fellow bloggers that won’t take a ton of time to make, will leave you satisfied and are perfect for the single gal (or guy) or for households of two!
Vegan Coconut Curry with Sweet Potatoe Noodles (GF + Dairy Free) from Food Faith Fitness
Healthy Turkey Stir-Fry from The Fit Blog
Creamy Pumpkin Mustard Sauce with Zucchini Noodles from Suzlyfe

We are in the biggest food rut so this was super helpful!
I was just talking to my husband yesterday about how we need to lay off the heavy meats and eat lighter, healthier, and more fresher for the next few weeks. These are some delicious looking (and healthy!) ideas that we could totally go for! Thanks
Good news is with the weather warming up, there’s farmers markets and for some reason, it just feels so much easier to eat fresh once winter’s passed!
I get home late so I can also be super lazy when it comes to cooking dinner! Stir fry and fried rice are pretty easy to make though and they are so healthy for you (as long as you include lots of veggies!).
