For many people traveling means a lot of fast food and eating out and while we have had a few meals out with friends as we pass through their neck of the woods, a huge reason for getting the RV was so that Sam and I could cook healthy meals for ourselves. Not to mention save money by buying groceries. Trust me, it’s so much cheaper that way!

Anyway, I thought it’d be fun to share a few of my eats lately from the road What I Ate Wednesday style, of course!

Pretty sure Spark is a no brainer…well Spark and coffee. Both keep me going whether it’s a long or short drive kind of day!

Not sure if I’m mentioned this on the blog but Sam is a fantastic cook! She doesn’t follow recipes, she just puts ingredients together, experiments and it always turns out so delicious. These egg cups with veggies were so good!

Acorn squash is so good! I could have easily eaten the entire squash.

When this year is over, it’s a requirement that I get a zucchini noodle maker. Because…this.

I’m so thankful that by having this RV we have a place to cook delicious and healthy meals everyday. I can only imagine how things would be if we didn’t have it. But let’s get real, if we can cook healthy meals for ourselves while on the road, anyone can do it from home!

    Hi Katie! Great eats! I love my zucchini noodle maker, but have been eating more spaghetti squash lately than other veggie noodles. I’m new around here to TLSM, so I want to hear more about this RV trip! 🙂
