Thanks for the reminder…
I’m spending my Wednesday morning sitting at the VW dealership looking into a mysterious issue going on with Betty. She’s acting up and it’s getting annoying so it’s time to get her fixed and back to her usual self. (Yes, I’m the girl who named her car.)
Anyway, I’ll stop talking about my car and get to the goods – literally, all of the delicious food I’ve eaten over the last week or so. Thanks to Jenn for hosting What I Ate Wednesday and not making it feel quite so awkward to snap pictures of our food. 😉
Here’s what I’ve been eating lately…
Egg White French Toast made with Gluten-free bread, also topped with banana
Leftover egg scramble with homemade applesauce
Yogurt bowl with chopped up apple and granola
Okay so this was just a snack but it was delicious – applesauce, pumpkin, almond butter + granola!
Grilled salmon from momma’s birthday dinner a couple weeks ago
I try not to eat much processed foods but mac & cheese is my guilty pleasure – dressed it up with broccoli, peas, tuna and smoked paprika!
Such an easy, simple but delicious dinner! Broccoli sautéed in coconut oil, roasted sweet potatoes and avocado
Veggie burger from a fun burger joint in Chicago. The veggie burger was only okay but the pretzel bun made up for it.
Oh, I’m sorry – is this not dinner? 😉
Is this better? Salad + grilled cheese made with Trader Joe’s apple cinnamon goat cheese – holy deliciousness! And a side of wine, of course!
