It’s late in the day for me to post, I know and I’m sorry. The last 24 hours has been a tail-spin of crazy but thankfully my asthma is back in check, my rescue inhaler is in my purse again and I have a nice mimosa next to me for cocktail hour.
I should probably also mention cocktail hour is accompanied by dessert tonight and is coming before dinner. Which in my opinion, is how it should always be. 😉
While I try to cut back my sweets, it’s still my weakness when it comes to healthy eating and sometimes you just have to indulge. When that time comes, I always have to figure out how to take a recipe and cut in in 1/2 or reduce it so I’m not stuck with sweets for days (or weeks).
Side note: the freezer trick doesn’t work for me because I often like the cookies just as much, if not better, straight from the freezer.
So when I had the craving for a baked apple something, I got to work and my hard work paid off. May I present to you Apple Crisp for One.
1 sliced and cored apple + 2 tsps sugar + 2 sprinkles cinnamon
Combine in separate bowl to form a crumble:
1 TBSP flour + 1-2 tsps brown sugar + 2 tsp butter
Put apple + sugar mixture in lightly greased ramekin or other small baking dish. Top with crumble and bake in a 375* oven for 30 minutes.
Top with Dulce de Leche ice-cream if you wish…

Your apple crisp for one looks great! I can’t wait to encourage your mother to make it but for two. I am also a great fan of frozen cookies.

Awesome! I make the baked apple part all the time as a healthy alternative to dessert, but I like the simple crisp to put on top.
