I’m joining in again for WIAW because I’m all for going green and eating your greens.  In fact, green foods are some of my favorites and I’m working on a recipe for a green food that’s all the rage this time of year but a MUCH healthier version…you’ll have to wait for that though. 😉

 

Instead today, I wanted to share a few favorite eats from the week.  But first, how cute is this little coffee owl a friend of mine posted on Facebook the other day?  I freaking LOVE it!

photo-212Anyway, I’ve been toying with a recipe lately…banana, coconut & almond flour…I can’t get it quite right. They taste good but they’ve still got a decent amount of tweaking…

I shared this dinner the other day but never told you what it was.  Can I just tell you that substituting leftover quinoa in a veggie fried rice is a GENIUS idea! This was so good!

photo-206I’ve also been on a kick of making egg scrambles for dinner this week.  It’s easy and delicious – doesn’t get much better than that.

This one had spinach, asparagus, green peppers, and corn, topped with avocado. It doesn’t get much better (or greener) than that! 😉

    Aww, it took me a second before I realized that owl was two coffee cups! How cute is that?!

    I’ve definitely been on a green kick lately…spinach and sugar snap peas being high on that list! I bought the peas a couple of weeks ago when I made my #strangebutgood BBQ stir fry but have NOT been able to keep my hand out of the bag since! Ha, guess there are worse things I could be addicted to! 😉

    Eeek! The coffee owl is adorable! Love all things owls and they’re all over the place lately! I love getting in my greens daily in many different forms. Green smoothies are always a huge favorite but lately it’s been green juices with our new juicer! Love it!

    For a current green eat: I sauteed brussels sprouts last night for a side dish with dinner. I almost always roast them, so this was an experiment. Apparently, it takes a long time though because they still didn’t taste fully cooked to me. We had to microwave them to finish it up. Oh well, it was a nice experiment!
