There’s no question, I had some great eats this past week. Even better, I made sure to get in my greens while still have a bit of variety.

I went for the Hippie Omelette which had spinach (greens!), goat cheese and pepper jelly. It was so good! Alongside were some amazing potatoes. I ate so much more than I originally planned and left stuffed but still had 1/2 of my omelette to take home. Oh, I’ll be back Prasino, I’ll be back!
Keeping with the eggs, I also had 2 eggs on a piece of P28 toast with a thin schmear of blackberry preserves. The added sweetness was so good! Alongside I had some grapes and a simple salad with homemade honey dijion dressing and avocado. This was so good!
Another favorite to accompany my salad repeat was a sweet potato smothered in peanut butter and cinnamon. This meal will never get old. And if you have yet to try the peanut butter on sweet potato, trust me, it’s amazing!
Finally, as I was preparing this salad last night, my mom mentioned how “creative” I am with my salads. You say po-tate-o, I say po-tot-o. You say creative, I say “garbage bowl” salad. This had a mix of greens with leftover vegetarian baked beans, homemade coleslaw, cherry tomatoes and avocado. No dressing needed; so good; so filling. Alongside I had a homemade corn muffin which put me over-the-top full.
Clearly, there are no boring greens around these parts!

Ahh, I LOVE topping a salad with leftovers! It’s seriously so hard to choose a favorite GB combo…I love adding hot and cold stuff together…like warm grains, cottage cheese, crisp peppers…and then a bit of tang with some balsamic vinegar! YUM!
That omelette sounds incredible! And I am LOVING the sweet and savory combo of your eggs and jam! I did that this weekend!

I’m a big fan of greek yogurt and cinnamon on sweet potatoes! Or black beans with some plain yogurt mixed with chipotles! Peanut butter sounds awesome!!! Also, fun fact, you have the same bowls as my in-laws. 🙂
I have got to check out Prasino. Sounds great! My favorite garbage salad ingredients include cabbage, mushrooms, and roasted kabocha squash.

we love our greens! kale and romaine are our favorites and seem to eat on a daily basis 🙂

I put sweet potato, sprouts, pomegranates, olives, feta, nutritional yeast, tomatoes, cucumber, carrot, zucchini, spinach and cabbage def anything goes 🙂
