One of my goals for this year is to share more delicious, healthy and budget-friendly recipes. Since I’m living on quite the budget this year, it’s important for me to continue eating healthy, well-balanced meals without breaking the bank.

One of my biggest tips for eating well is food prep and today’s recipe is one that’s easy to prepare at the beginning of the week and have to eat for the days to come.

I made a big batch of these Herb Roasted Potatoes and ate them throughout the week, tossing them on salads for lunch and eating with eggs and green veggies for dinner. Easy, peasy.

  • 2lbs mini potatoes, halved
  • 2 TBSP (coconut or olive) oil
  • 1 TBSP spices (I used an herb mix)

Toss all ingredients together on a large cookie sheet until evenly coated. Place in a 400* oven and cook for 40-45 minutes, stirring every 10-15 minutes.

      I LOVE dill! My boyfriend has been living off potatoes for lunch and dinner the last several weeks and he’s not sick of it. He was my inspiration to make these!

    I think I’m going to have to try this. I’ve got half a bag of potatoes sitting in my pantry that I need to figure out something to do with!
