It’s no secret I’m a single gal. I live in the ‘burbs and it’s hard to meet single guys, especially single guys that I’m even remotely interested in dating. But this post isn’t about my dating life and I’m sure most of you aren’t actually interested in reading about my lack of love life. 😉
What this post is really about are the eats of a single gal because I realized as I ate the same dinner two nights in a row over the weekend and the same thing two nights in a row the last couple days, I definitely eat like a single gal. Let’s take a look shall we?

And while last night’s dinner was different, it’s merely because I spent the evening in the city and my packed lunch was pb&j so I could splurge a bit come lunch time. So please know that tonight I return to that giant pot of soup and tomorrow I’ll have more for lunch so I can have a Chipotle salad for girl’s night.
I lead such an exciting life – please be jealous. 😉

Please share that soup recipe! Also, I definitely eat the same thing for dinner all week and lunch all week. It’s not just the single gal eats, but the single busy gal! There’s no time to cook fancy meals every night with a full-time job, hitting the gym/yoga, and having other personal and social commitments.
It came from a package that I bought when we went apple picking this year. I want to figure out how to make it myself but I threw out the package, which doesn’t help very much…
Haha I can TOTALLY relate to this post also!! I’ve been trying to make recipes for “two” lately…and the second portion I just bring as leftovers for lunch at lab the next day! 🙂
It’s a good thing I don’t mind leftovers because that’s what I do! Lunch or dinner for the next night…and the night after that…and sometimes the one after that too! 😉
I could commiserate all day long about wanting to date, but having no options. Although my favorite thing about single girl eats is that if whatever I’m making doesn’t turn out, or I just don’t like it. I can get rid of it! I can have popcorn for dinner, or a piece of toast and call it good. Someday when I’m making food that others have to eat, I’ll have to have a better backup plan.
