It’s true – I’ve gone protein muffin crazy over here! It’s a good thing I’m moving next week and had to pack up all of my baking stuff…
It’s in there somewhere.
But lucky for you (and my belly), I got in one more recipe before everything went in boxes. Just ask my roommate, these things are good!
Chocolate Pumpkin Protein Muffins
Ingredients:
1 cup whole wheat flour
1/2 cup almond flour
2 scoops vanilla protein powder (I used FitMixer)
1 tbsp baking powder
2 pinches salt
3 tbsp cocoa powder
3 tbsp truvia
2 egg whites
3/4 cup almond or soy milk
3/4-1 cup pumpkin
1/4 cup chopped pecans
Mix all dry ingredients together. In a separate bowl, mix all wet ingredients together. Fold the dry ingredients into the wet mixture and then fold in the chopped pecans. Spoon dough into sprayed muffin tins and bake in a 350* oven for 20 mins.
Again, I recommend topping with a little peanut butter – because it tastes good! 😉
