We are having such a strange fall – from 80 degree days to days where your boyfriend better remember his hat or his head will get too cold (hehe) to days when I’m running outside in shorts and a tank top and not freezing to death. I can’t keep up! And as such, you may have noticed this is going to be my second COLD recipe for #PumpkinWeek2015…
This is another SUPER easy yet totally delicious recipe; I don’t have the time or energy lately for anything complicated or that takes too long. Let’s just be serious about that but if you’re ready to take the average banana soft serve to a whole new level, break out that can of pumpkin and let’s get down to it…Pumpkin Banana Soft Serve!
- ¾ cup coconut milk
- 1 cup pumpkin
- 1 stevia packet
- 1 frozen banana
- sprinkles of cinnamon (to taste)
Combine all ingredients in a blender cup and blend away. If desired, put in the freezer for a few minutes before enjoying (but not too long or it will get icy).
Note: you can leave out the stevia (or use less) if you’d like but I recommend a little bit as the pumpkin will take away some of the sweetness from the banana. Also, I’m the girl that thinks there’s no such thing as too much cinnamon but I’ve learned not everyone feels that way (coughtheboycough) so sprinkle to your little hearts content. 😉

Yes it’s been such a weird fall! The day we went to the pumpkin patch it was 80 degrees out which felt insane because I’m usually freezing when we go!

YUMM!!! I love the addition of coconut milk to this – I’m sure it adds an incredible flavor to the pumpkin and banana. This is the perfect Florida fall treat!
