We have another holiday to celebrate today! And no, I’m not talking about Black Friday! It’s National Parfait Day!
Don’t roll your eyes at me! If you are a dedicated Black Friday shopper, then you need some fuel to get you through a full day of shopping and I have just the recipe!
I have never been a Black Friday shopper (I’ve always had to work) and after giving it a try several years ago, the crowds late morning were more than I could take. I’ll still be working this Black Friday but if any shopping happens, I can assure you it’ll be happening from the comfort of my living room and right online. I have no hate if Black Friday is your thing, but it’s not mine!
Regardless of how you’re spending the day, this Pumpkin Pie Chia Pudding is a must-make!
- 1/3 cup chia seeds
- 1 can full-fat coconut cream
- 1 teaspoon pumpkin pie spice
- ½ cup canned pumpkin
- 1 teaspoon vanilla
- 1 Tablespoons honey
Combine all ingredients in a bowl, stir and put in the fridge overnight or a few hours. When you’re ready to eat it, scoop some into a bowl and top however you’d like!
Sure, this is not your normal parfait, but it would make a great base if you wanted to alternate layers of toppings or extra coconut cream or pumpkin! Mmmm…I’m getting hungry just at the thought!
I used to eat a parfait for lunch every single day before Greek yogurt found it’s way onto the “my stomach does NOT want you to eat this” list. I would do Greek yogurt, fresh fruit and granola. It was one of my absolutely favorite lunches and to this day, I still love making versions with dairy free yogurt, fresh fruit and gluten free granola.

Ugh OMG I work attached to a mall and Canada always advertises Black Friday sales but it’s really a hype for nothing compared to the deals yall get south of us. I just had to make my way back from the gym through the mall and almost went postal. I can’t deal with the crazy crowds, it’s too overwhelming.
