Happy Sunday! 

I’m nearing closer to my day off and it definitely can’t come soon enough.  I’m exhausted and have a lot to do (including lots of studying)!  But I’m remaining in good spirits because ultimately there’s nothing that I can do about it so I better at least make the most of it.  And then enjoy the paycheck when it arrives! 😉

I’ll make this relatively short today but I’ll make it worth your time.  See while we’re in the middle of this peanut butter recall, and if you’re like me and prefer “natural” peanut butter versus the Skippy and Jiff’s of the world, then I’m sure this recall is affecting you.  (I hope not in the way that you had a jar that made you sick!) But more in that your options at the grocery store have become limited and frankly, until this all passes over, you feel slightly nervous.

Do you know there’s an easy answer to that problem? Make your own.

And before you freak out, especially if you’ve never made peanut butter before – it’s easy! And I’m providing you with the recipe so all you have to do is follow the directions! Say what?!

Pumpkin Spice Maple Peanut Butter

  • 4 cups peanuts (roasted or raw)
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 1/2 tsp pumpkin pie spice
  • 2 TBSP maple syrup
  • oil (optional)


If your peanuts are raw, begin by roasting them in the oven at 350* for 15-20 minutes. Put them in a shallow pan and make sure to give them a shake half-way through. You’ll probably have to roast them in phases.

If your peanuts are already roasted, skip the above step and move on.

Pour the peanuts into your food processor and let them go. Be patient as they will take time, but make sure to stop the food processor on occasion and give it a stir to get any peanuts stuck on the sides of the bowl.

Once the peanut has mostly come together, add the remaining ingredients and blend.

For me, this is the perfect consistency and flavor. If you want a peanut butter that is easier to stir, slowly add oil until you have your desired consistency.

    I have been slowly making my way through my OBSCENE amount of nut butters over the last month or so…once I get it down to a few jars (yeah, I know…you really DON’T want to know how many I started with), I’m vowing to start making my own more often! It’s so easy, I really don’t know why I don’t do it more! And I can’t believe I’ve never thrown in some pumpkin pie spice! Mmmmm! This is SO happening!

    I like almond butter, but my heart will always belong to the peanut! 😀

    And what are you talking about? EVERYTHING I make is delicious…how can I choose just one?! 😉
