PUMPKIN EVERYTHING!
Okay, okay…I’m sure some of you are lowering your heads in shame, while others are grabbing their keys to drive to the store and buy their next pumpkin spiced latte…but before you do, I have an alternative.
Sure, I did treat myself to a PSL at the start of the season myself (only 1 pump and extra shot of espresso) but sweet coffee really isn’t my thing, so I’ve had to find other ways to enjoy and get my pumpkin fix. #sorryNOTsorry
You all already know about my pumpkin protein pancakes from Saturday morning, but what you don’t know is that I followed that delicious breakfast with a pumpkin filled protein smoothie for lunch. I originally made the smoothie mid-last week after trying to use up some more pumpkin left from pumpkin muffins (told ya, PUMPKIN EVERYTHING), and after one sip, I knew I couldn’t keep this recipe to myself; it was too good to share.
While the recipe calls for Vanilla Protein Powder, I also tried it another day with a scoop of Vanilla Latte flavored protein powder and I have to admit, I think it was better than any PSL blended coffee drink you may pick up from your local coffee shop; just saying. Put your keys down, make your way to the kitchen, and you can thank me for this later.
Pumpkin Spice Protein Smoothie
- 1 scoop vanilla protein (I used THIS one)
- 1/4 tsp pumpkin pie spice
- 1 scoop greens powder (I used THIS one)
- ½-1 scoop collagen peptides – optional (I used THIS one)
- 1 cup almond milk
- 1/3 cup pumpkin
- 1/2 frozen banana
Start with almond milk in your blend cup and add powders on top; blend for a couple seconds. Add pumpkin and frozen bananas (can also add a couple iced cubes or any additional liquid, if you would like); blend until well combined. Throw a straw in your cup, sip and enjoy!
Seriously, don’t walk, RUN to your kitchen and enjoy ALL THE PUMPKIN!
