Salads Lately

Salads have been one of my favorite foods for quite some time. I love making what I call my “garbage bowl” salads because they contain pretty much everything and anything that happen to be in my fridge, simply tossed on top of some dark leafy greens. Easy to make and super delicious.

I’ve been needing to change up my salads lately so I thought it would be fun to share a few of my favorites lately – some made at home and some eaten out but being used as inspiration for future at home creations!

A super yummy salad from Saturday night at Red Rock Brewery with shrimp, sweet potatoes, nuts and grapefruit with balsamic dressing on the side.

Kale & arugula with tomatoes, cucumbers, strawberries, blueberries and avocado with pomegranate balsamic & olive oil.

Another salad from Red Rock Brewery with beets and pine nuts. YUM!

My favorite at home salad lately uses tahini to make a quick dressing with dark greens, carrots, avocado, misc veggies and sunflower seeds. Mmm..

What are some of your favorite salad toppers?

I really love salads too, but I always love them more when someone else makes them for me. LOL. I get kinda lazy when it comes to making salads at home. But, I do love when I have tons of random things I can dump on a bed of lettuce and call it good. Like you said, easy and delicious. 😉

I’m a huge salad fan too – I always have one with breakfast. Salads are such a refreshing thing along side heavy breakfast items like bacon and eggs, and I don’t know why more places don’t offer greens with breakfast!

Really? I love salads but I’m not big on them being at breakfast. Although I guess I do smoothies for breakfast and stuff those with spinach or kale…same thing, right? 😉

I am pretty obsessed with salads as well and that shrimp looks yummy!

I just found your blog and I want to say, I LOVE the title. It is a lesson I try to instill in my middle school students every day. What a great message!
