I am a dietetics student trying to live a semi-healthy life by balancing healthy food, fitness and a sweet tooth.

I’m so excited to post for my friend Katie!Β  We met in May at Blend Retreat where we were roomies and seriously, they paired us together perfectly.Β  I’m even visiting her for Thanksgiving.Β  (Okay I’m visiting family close by but still.)

Katie guest posted for me about her vegetarian lifestyle last week (so I could get through my first week back to school) and I am returning the favor (so she can get through moving)! πŸ™‚

Since Labor Day is coming up, I thought I’d share a yummy guacamole dip to share at a holiday party or get together of any kind really.Β  Guacamole is one of those things you need to make right before you eat it (or it will turn brown on you), so you will need to bring the ingredients with you.Β  It’s fun though because you can impress your friends by scooping out the avocados and squeezing lime juice…you know doing those chef-y things.

I’ve experimented with ingredients and I really like this one I’ve come up with, modified from my Nebrexican Guac recipe.Β  I made this last night for Dave (the BF) and a couple of his friends for Mexican night, although I didn’t know that his friends don’t like guacamole…who doesn’t like guac??Β  It’s okay though because Dave and I scarfed a lot of it down last night, sent some to his sister (who is a fan) and had some leftover today.Β  I may or may not munch on some after finishing this post!

Corn Guac with a Zing

Serves 4-6 (depending on how much you eat while you make it)
Ingredients:
3 avocados
juice from half of a lime (or some margarita mix if you really want to party)
salt to taste
pepper to taste
2 sweet peppers (we used red and orange) chopped
1 can of southwest corn
southwest spices (I used Mrs Dash)

How To:

  • Scoop out avocado into a bowl and mash with a fork.Β  You can use a knife to cut some of the big pieces if necessary.
  • Add remaining ingredients and mash all together.Β  Voila.
  • Enjoy with chips, carrots, celery, cucumbers, fingers… πŸ˜‰
Yes, there is a Christmas tree in the background.Β  No, it’s not December…or even winter.

Storing:
Add a little extra lime juice and store in an airtight container with the pit to keep it fresh.

    “It’s fun though because you can impress your friends by scooping out the avocados and squeezing lime juice…you know doing those chef-y things.” <- Haha! I've totally thought that before when making things in front of my friends…like, "Look what IIIIIIIIIIII can do!" πŸ˜‰

    Chunky guac is the best…I always love mine loaded up with tomatoes, onions and peppers, but I have yet to try adding corn! Just a little tip I learned from Mama Pea…after you plop the pit in the bowl of leftovers, you can tuck a piece of plastic wrap in over it (like a little guacamole blanket) and it keeps even BETTER!

    I get the joy of working tomorrow…but heck yeah for time and a half!! Make dat MO-nay! πŸ˜‰ Hope you and the bf have a nice relaxing day!

    And please…do explain the Christmas tree! πŸ˜‰
