It’s Wednesday which means I have some tasty eats for you but before I get to that, I HAVE to share this video.  Chances are you’ve probably already seen it with the way it’s taken over the internet.  Or maybe you’re like me and you’ve seen it but never stopped to press play.

So for some dumb reason a Prince Harry video uploaded before? I think I’ve fixed it now, sorry for any confusion!

Now onto my eats because they were FAN-FREAKING-TASTIC this week!  (I’m not sharing any breakfasts or lunches because they were the usual deliciousness…

photo-187I love walking in the door, seeing a package of frozen ground beef on the counter and french bread on the table.  It means my dad is making spaghetti! (He’s not a pasta fan so we always consider it a treat when he makes it!)  Mine was obviously a meat free sauce but we had a few meatless meatballs in the freezer that were thrown into my sauce.  Bread, salad and wine on the side.  DEEElish!

photo-186Do you see the yolk in the middle of that bagel?! Oh man! This was so good! One fried egg on top of a bed of arugula piled inside a P28 protein bagel.  This dinner was phenomenal!

Who doesn’t love a good quesadilla? After seeing Courtney make a chicken & sweet potato quesadilla, I knew I needed to make a version I could eat and this couldn’t have been simpler.


1 tortilla (I used a small flour tortilla because that’s what we had), cooked mashed sweet potato (I used 1/2 a small sweet potato), a sprinkle of black beans, arugula or spinach, and a sprinkle of dairy-free cheese.  SO good! Served with a giant salad on the side and I was a happy girl! 🙂


Gotta love some easy, tasty eats.

    I will have to go back and try again to watch that…it isn’t loading on my computer at school. 🙁

    In happier news, I am loving the looks of that bagel. It is moments like this when I consider eating eggs again. Runny yolks. Gotta love ’em.
