I’m so excited because today I have one of my Blends, Lauren, guest-posting. With all the craziness of moving and immediately starting a new job, I was feeling overwhelmed. I was so thankful when Lauren said she’d share a recipe with all of you guys and holy deliciousness, I think you’re in for a real treat! Take it away, girl!

To tell ya little bit about myself, I’ve always loved fitness and I just got into cooking a few years ago. With all the wonderful cooking, I gained about 10 pounds! I was following recipes to a T, which meant lots of butter, cream, sugar, cheese, all the delicious yet bad stuff! Thanks to Pinterest I found new workouts to challenge myself and learned about clean eating.

Then the wonderful world of Instagram came along so I started following my favorite bloggers on there. I ended up losing 20 lbs. and became extremely passionate about health & fitness. So in January I finally mustered up the confidence and stopped listening to the evil little voice inside my head saying I couldn’t do it and boom Sweat The Sweet Stuff was born! (I came up with this name because I have a sweet tooth and I love working out so I thought it was very fitting.) I love helping people realize that eating healthy doesn’t have to be boring! All you have to do is make a few simple swaps in a recipe so you can still enjoy the foods you love!

Breakfast is my favorite meal of the day so you’ll find plenty of decadent yet healthy recipes for oats, pancakes, waffles & french toast on my blog as well plenty of other meals. Today I thought I’d share my delicious Banana Split Protein Pancakes with you. It’s like having dessert for breakfast!

sweet stuff

Banana Split Protein Pancakes

for the batter:
1/4 cup oat flour
1 scoop vanilla protein powder
1/4 cup egg whites
1/2 tsp baking powder
1/2 tsp vanilla extract
1 tbsp unsweetened applesauce
unsweetened vanilla almond milk to desired consistency

 

layers:
greek yogurt w/stevia
sliced strawberries and bananas
top w/coconut whipped cream (put coconut milk from the can in fridge overnight, take out in morning, get rid of the extra liquid and beat.) top w/more strawberries, bananas and my healthy chocolate sauce.

 

*Note: you can leave out the protein powder and use another ¼ cup of oat flour.
