I’m bringing back an oldie but a goodie today. A couple years ago I created this recipe for a company that I was writing for…since I was never paid for it and no longer write for them (I don’t even know if they’re still around?), I decided it’s okay for me to share it….it is MY recipe after all, right? 🙂

I’ll get this converted over to my Recipage at some point but I’m currently locked out of my Recipage account since I had to get the hard drive replaced on my computer, don’t remember my login and the site doesn’t seem to be working when I try and figure it out. Womp womp. But I didn’t want to keep pushing back this post….so you get it like this and I’ll update it once things get figured out. HA!

I may be vegetarian, but I love delicious (and healthy) foods.  And like many others, I love Mexican inspired meals like tacos, burritos and quesadillas.

 

When my dad brought up having tacos for dinner, I knew I was going to have to find a vegetarian friendly taco filling for me.  While there’s always the easy go-to of black beans, I wanted something more and the idea of breaking out the slow cooker to make one of my favorite fillings wasn’t in the cards for today.  I needed something that was relatively quick and easy but still super delicious.

 

Turns out, even my meat-eating and loving parents enjoyed a taco with vegetarian filling!  I highly recommend making this your new go-to whether you’re looking for a vegetarian friendly taco filling or a healthy alternative to your usual meat filling.

 

Healthy Tempeh Tacos

 

Ingredients:

 

-1 small onion, diced

-1 clove garlic, diced

-1 brick tempeh (8oz)

-1/2 can black beans, rinsed and drained

-1/2-1 tsp chili powder (add more to taste)

-1/2-1 tsp cumin (add more to taste)

-salt & pepper (to taste)

-1/4 cup water

 

Directions:

 

Begin by sautéing the onion and garlic in olive oil.  While they sauté, break up the tempeh into small pieces; add to the pan along with the black beans.  Let the mixture sauté for a few minutes and add your spices.  Once the spices are distributed evenly, add 1/4 water and cook until no water remains (this should only take a minute or two); remove from heat.

 

Now comes the important part – make your tacos and don’t forget to add your favorite fillings.

 

I topped mine with lettuce, olives and my dad’s homemade salsa.  Delicious!

    Awesome! Have never tried tempeh, but have been very curious about it for its properties to help me recover from my training. Will have to give this a go! Thanks 🙂 Oh and yes I love tacos 😛
