I don’t know if I woke up feeling refreshed and renewed or just had an urge to break from my usual eats, but Friday was a day where this creature of habit changed things up! I’m excited to share this day of delicious and fun eats with you all.

Breakfast:
I decided to break out the P28 bread the company (and Lauren) sent me. While it made delicious toast Thursday morning before work, I decided having the time to cook in the morning on Friday meant I wanted to take it to the next level: pumpkin french toast.
Oh yes, that’s right. I made a batter with 1 egg, a splash of almond milk, 2 TBSP pumpkin, and pumpkin pie spice. I let the bread soak about 1 min each side and then cooked it up. Topped with sliced banana, pumpkin spice peanut butter and maple syrup. Oh yum!
Lunch:
I may have told my dad I was a genius after this. Though I can think of ways to make it even better (!!).
(Soy) cheese quesadilla with sliced apple dipped in my dad’s homemade salsa. The rest of the apple on the side with more pumpkin spice peanut butter.
Dinner:
My parents had mentioned going out for dinner Friday night and as crazy as it may seem, I didn’t really feel like it. I told them I’d make myself dinner and they can enjoy a date night out. Date night out turned into a double date with their good friends (and my God parents). Meanwhile I made this:
Roasted brussels sprouts, butternut squash, and apples with sage. On the side, Courtney’s Hearty Oat Loaf (buckwheat flour instead of whole wheat) and topped with homemade pumpkin butter.
Boom. Sometimes it’s good to change it up a bit!

When was the last time you broke out and made something new?

I am SUCH a creature of habit. I prefer to just think of them as food fixations, rather than ruts, because rut implies not being happy you are there. I just really really really love something and then I burn out on it.
I LOVE P28 bread. LOVE it. It literally just rip it apart and eat it like I’m feeding ducks…but I am the duck.
That is totally something I would do! And should do… 😉
I love brussels!! I have been eating a lot of the same things this week due to no appetite and food allergies! 🙁 I need to break out of my rut!
Aww girl, you’ll figure it out! I often eat a lot of the same things because of knowing my body can handle it but there’s still too much sugar or something because my body hasn’t felt great the last couple days.

I am definitely a creature of habit (with everything). But I didn’t go to the grocery store this week, so I’m figuring stuff out as I go along. 🙂

I’ve heard such wonderful things about P28 bread. I love the fact that it is so high in protein!
Hmmm… And that bread topped with homemade pumpkin butter sounds super good.
I definitely recommend trying it! It’s so good and has kept me feeling full and satisfied more than I expected!
