Happy Hump Day!  Feels good to know you’re half way through the work week doesn’t it?  Well, unless you’re like me and have an ever-changing schedule.  Today is like my Friday, but one of those Friday’s where you’re only off Saturday and have to work on Sunday.  Yes I know that didn’t make sense.


It’s a good thing it’s What I Ate Wednesday because I think I’m losing my mind.  Or maybe it’s the Sam Adam’s Cherry Wheat talking.  I kid, I kid.

 Breakfast:

There’s nothing like some delicious P28 toast with peanut butter, banana and a smear of homemade pumpkin butter.  And you should never forget the cup of coffee with soy milk – a daily necessity (usually x3)… 😉

Lunch:

A return of my usual Chobani Greek Yogurt, sliced apple, and cereal.  And as usual, it was incredibly delicious.

Dinner:

I asked my dad what he was thinking for dinner the other day but he wasn’t sure.  Since it wasn’t really cold outside, I made the suggestion for grilled shrimp (and salad and butternut squash).

Sometimes the hardest thing is figuring out WHAT to have for dinner.

Snack:

These are good but I’m not ready to share the recipe, still working on ‘em.  But just to tease you, they are Gluten-Free, Vegan, Pumpkin Oatmeal Cream Cheese Muffins.  Intrigued yet?

Something New to Try:

There are some absolutely amazing companies out there and I feel blessed every time I get the chance to work with them.  Mark from Drink Chia! sent me a fun little package on Monday.  It was like Christmas in October.  Once I’ve tried them all, I’ll share my thoughts.  Thanks again, Drink Chia!

      The homemade pumpkin butter didn’t turn out QUITE as well as I wanted it too. I think I needed to blend the pumpkin because it was a fresh pumpkin that was a bit stringy…

      My goal was to actually GET the Pumpkin but they were out so I went for cherry wheat. I wasn’t leaving empty-handed. 😉

    I’m definitely intrigued. Especially about the gluten-free, vegan part. That means no wheat, eggs or milk, right? Haha. Just kidding. It seems like a lot of recipes that bloggers post though, that are supposed to be “gluten free” or “vegan” or “sugar free” really aren’t. The substitutions are. And the original recipes are always the best 🙂

      Well I can’t guarantee that if you made the recipe with normal flour or cream cheese that it wouldn’t taste better, but it’s being created in a way that I can eat it (and since I can’t eat cheese, I won’t know any better). 😉

    I agree with Michelle – that toast looks sooo yummy right now! I don’t know what it is about it – maybe the thick layer of ‘naner? I have a really ripe banana sitting on my counter right now that is calling me to smash it up and eat it on toast for breakfast tomorrow!

      This is my breakfast almost EVERY morning. When I was on a trip with one of my friends over the summer and didn’t get my morning ‘naner, I felt SO off. HA!

      I went to the store hoping for Octoberfest or some kind of Pumpkin beer and the store was OUT!? Then I saw the Cherry Wheat and knew I couldn’t leave empty handed! 😉
