One of the greatest things about healthy living retreats is that you know you’re going to eat well.  When you’re surrounded by healthy living enthusiasts and food bloggers, the food can’t disappoint and thankfully, it did not.

 

Let’s back up a bit…that cocktail party.

Knowing we had a delicious dinner on the way, I didn’t want to eat too much but there was a beautiful spread and I was hungry so I grabbed a small plate with a few veggies and a spring roll.  And a glass of wine, of course! 😉

As we walked into dinner Friday night we were greeted with another beautiful spread to cater to all of us – vegan, vegetarian, gluten-free.

I filled my plate with salad, bulgar salad, roasted veggies, and a delicious quinoa cake.  It was all really good!

IMG_1597To end out the night, I went for the dairy-free option of a mini apple tart.  I’m not big on pie crusts so I was happy when the crust tasted more like a cookie – so good!

Saturday morning was the breakfast by Muesli Fusion and Laughing Cow.  I had a cup of Muesli along with fresh fruit, coffee and part of a Chobani with a little more Muesli when I was thinking I was still hungry. I wasn’t and couldn’t finish it all.  It was delicious!

Lunch ended up getting lost in the shuffle but there were some tasty snacks instead, including a small hemp protein shake and rice cake with nut butter.

For dinner I went out with a few girls to 501 on Main where I got their beet salad with Salmon.  That salmon was probably some of the best I’ve had!

IMG_1658Sunday’s breakfast was provided by Chobani and while lacking vegan options, there was no shortage of Chobani.  I grabbed a Chobani based oatmeal with toppings, fresh fruit and a Chobani bite.

IMG_1671Since we were leaving right around lunch time, we made a quick stop at the Whole Foods salad bar.  I filled my salad with a variety of mixed greens and toppings.  It was delicious and just what I needed before my flight home.

    Was that quinoa cake not amazing?! It was so much better than the fish or chicken…which was nice since last year’s vegetarian option was a little disappointing! Can’t wait to see what they whip up next year! And oh my gosh, that beet salad and salmon looks delicious! I definitely could have used a bit more greens when it came to my meal on Saturday night…I felt like all I was eating was muesli and fruit! Lol

    I wish we had gotten more time together this weekend! Hopefully we can plan a meet up soon! Were and Brittany still thinking about this weekend by any chance?

      I DEFINITELY think this year’s dinner was better than last years, though those cupcakes last year were GOOD!

    is it weird that i feel like I hardly spent any time with you and amanda this weekend? i did it on purpose because you two are close and i know i’ll see you (hopefully) soonish, but now I wish I would have spent more time just hanging. I also feel like that’s my default comment on everybody’s blog because there wasn’t enough time!

      You know, I was thinking the same thing! We had a few minutes here and there but definitely think we need another girl’s weekend!

      Right? Though if I did, I’d probably need a GPP bootcamp every weekend too! 😉

    Lunch got lost in the shuffle last year, too. Next year I’m making a conscious effort to get something to eat. 🙂

    Your dinner from Saturday looks amazing! I wish I hadn’t been pulled in so many directions, but I am SO happy you and I got to spend a ton of time together throughout the weekend.

      ME TOO! Loved getting to spend so much time with you. 🙂 Maybe we need to suggest lunch being provided next year…it’s hard to make it happen between bootcamp, hiking and then desperately needing a shower before “afternoon snack” time.
