I would be remiss if I didn’t acknowledge today. My thoughts and love are with our country today and those who were affected 12 years ago. I can’t believe how long it’s been, as I’m sure I’m not the only one who remembers it like it was yesterday. Two years ago I shared a poem I wrote only a few hours after the attack – if you’re interested, you can check it out here.
On another note, I’ve been bored lately. Not just in certain aspects of my life but with my food. While I love my giant garbage bowl salads, english muffins with peanut butter and banana, and coconut milk yogurt bowls, I’m overdue to change it up! I’m hoping that once I get my own place, I’ll find my drive to be creative in the kitchen again but for now I’m trying to force myself to cook dinner, meal-prep, or at least start thinking about what else I would enjoy eating that would still be healthy and fuel my body.
While I’ve still had my usual foods this week, I have started changing things up a bit, at least slightly so let’s take a look at what I’ve eaten this week…

English muffin with Maranatha peanut butter (I got it on sale and w/ a coupon – SCORE!) with coffee, of course!
