Happy What I Ate Wednesday!!

And lucky for you all, FitKit published my recipe immediately after I sent it in on Monday and so it’s up and ready for you to see, make and then top everything with!
Until then, you can see my cranberry sauce obsession and find fun new ways to use your leftover cranberry sauce this holiday season. Or like me, make it just to use for these purposes (and of course to just eat with a spoon).
Oatmeal
This was actually what sparked it. I saw a couple people top their oatmeal with leftover cranberry sauce and I became immediately envious and knew this would have to be re-created. And it was as delicious as I imagined.
Yogurt
Yes, even my yogurt bowls needed in on the action. And paired with pumpkin granola this was the perfect fall yogurt bowl. There wasn’t enough cranberry sauce for me to eat this all week and that was a bummer. 😉
French Toast
I’ve gone crazy! In the best way possible, of course. This was gingerbread french toast topped with peanut butter, banana, and cranberry sauce maple syrup. Oh my. This will happen again, have no fear!

I used to be more of a canned cranberry sauce person, you know the jellied kind? I know – gross. But lately I’m come around to actual cranberry sauce and it makes such a great addition to a lot of things. I enjoyed it most with leftover turkey from Thanksgiving. Yum!
What a great way to use cranberry sauce…I made a huge batch for 4 people on Thanksgiving, and was left with a huge bowl, I froze it because I was really not sure what to do with it….Problem solved, genius my friend, genius.
So many different uses! My favorite would be on top of a microwave protein cake or on banana “ice cream.” Looks delicious, and congrats on being published by FitKit!!
The cranberry apple cider compote I made this year was a HUGE hit and thankfully I got to take some leftovers home 😉 Now I want to make some more… I loved it on toasty cranberry walnut bread, oats, and mixed with plain Greek yogurt!
I’m a cranberry sauce fan. I usally just add it to Christmas savoury meals, but I am loving the idea of having it sweet foods.

I love cranberry relish the best! In fact, I just bought another bag of cranberries the other day because my leftovers are gone!
I used to HATE cranberry sauce…but that’s probably because it was the jarred junk and not fresh like yours. I love the fresh kinds and yours looks DELICIOUS!
i think i would go through that sauce in one day, just with a spoon. NOthing else needed. Bring it!
We don’t do a whole lot of cranberry sauce in Ireland but I will definitely be whipping some up after this inspiring cranberry sauce filled post!
