On Wednesday I promised you a recipe for these muffins:
You see they’re really quite delicious and based off this recipe.
But because I have this constant desire to change and adapt and make recipes healthier or “my own,” I had to make some changes.
Thankfully, the changes were deemed a hit. So much so that I doubled the recipe and have some in the freezer to be devoured on a future occasion. No complaints here.
Apple Muffins
Ingredients (12 muffins)
- 1/4 cup almond flour
- 1 cup whole wheat flour
- 1/2 cup oats
- 1/3 cup brown sugar
- 1/3 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 tsp cinnamon
- pinch nutmeg
- 2/3 cup apple cider
- 1/2 cup oil
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cups apples, peeled, cored, & chopped
Instructions
Mix all dry ingredients; mix all wet ingredients; combine. Fold in chopped apples.
Evenly divide batter among muffin tin (lined with paper liners). Bake in a 400* oven for 18-20 minutes.
And because taking a moment each day to be thankful, especially with the holiday season approaching, and while I’m busy studying every.single.moment.of.every.single.day, here is what I’m thankful for today:
I’m thankfulfor having a kitchen to cook and bake.
So simple but there are still so many out there who don’t have a kitchen (or even a home!), it’s really something I’m very grateful for and appreciate more than I can express.

Those muffins sound & look delicious! I’m totally with you on having to adapt & make my own little changes to any recipe I find. I think it’s important to “make it our own”. I totally laughed to myself when I read that you do that & how you said it because that’s exactly how I think.
